Healthy Fruit Gummies (GF, DF, Paleo)

According to the large chocolate displays at local stores – Easter is near.  With it unfortunately is the abundance of unhealthy indulgences at every turn that personally haunt my taste buds like nobody’s business.  What’s the solution? A fun and healthier treat for kids – that they’ll actually LOVE.

I was reading through The Spunky Coconut’s website (if you haven’t gone, go, her gluten-free/dairy-free/Paleo recipes are lovely!) and found a recipe for Strawberry Rhubarb Gummies.

I looked in the freezer – I had neither. Huh.

But I did have mango and raspberries…and when I opened the fridge I found mint, lime, and ginger…ok gang, we’re in business!

(Yes, yes, unicorns. Seemed fitting since these fun fruit gummies are magical. 😉 )

I also had my beloved Vital Proteins Beef Gelatin making these fruit gummies are a source of good protein as well!

Two mixes were tested;

  1. Mango/Ginger/Turmeric
  2. Raspberry/Mint/Lime

The taste testers? My co-workers since we’re all giant kids at heart! Ha ha. Admittedly I mostly trialed the raspberry mixture since I added too much turmeric to the mango (which is fine for me, but kids might revolt and that could be dangerous).

I’m sure there are plenty of other mixes you can experiment with, personally I’ve been thinking about blueberries and lime!
