A Russell Sunrise: Clean Eating Egg & Prosciutto Breakfast

Forget fried eggs and greasy bacon…here’s a healthy alternative that will have your guests wanting more! A friend of mine treated me to this delicious breakfast egg idea years ago and it’s been a staple of mine ever since.

When I asked my mother what I should call this breakfast, the promptly replied “a Russell sunrise” after our small village hometown. 🙂 I’m down with that!

It has all the elements of a great breakfast; lean protein, complex carbs, good fat and bucket loads of great taste!  What I love is that it’s quick and simple to put together, yet good enough that your house guests will think your gourmet! 🙂

  • 2 slices of Ezekiel toast (traditionally English muffins were used)
  • 2 eggs
  • 2 slices of prosciutto
  • 1 Roma tomato
  • 1/2 avocado
  • 4 tbsps fresh shredded Parmesan cheese
  • dash of pepper

Poach two eggs (in a small pot with a 1tbsp of vinegar).  Ideally the eggs will be soft poached although I tend to always overcook – ha ha.  Toast the bread.


Pile on the ingredients in the following order; toast, prosciutto, Roma tomato, avocado, poached egg, pepper and Parmesan.  For the perfect meal, I like adding a side of berries or fruit salad.

  1. Whilst you poach your eggs you can put your muffins in the toaster, brown them so they are slightly crispy and voila, you have a delicious breakfast perfect for a lazy Sunday morning.
